80 % Tempranillo - 20 % Garnacha (hundred-year-old)
VINEYARD/ORIGIN
Finca El Monte, located at 680 meters altitude. The vineyard is oriented to the rising, with deep stony soils, ‘La Pedriza’.
Elaboration
The vinification process begins with a selection of grapes from ‘La pedriza’. Rigorous control of temperature during the alcoholic fermentation, with soft and long pumping-overs in order to extract the maximum colour and subtle aromas. Afterwards and as the last stage of the vinification process, a 20 day macertation will take place. The process ends with the malolactic fermentation made in new French oak barrels. Afterwards the wine will remain for another 19 months in American and French oak barrels.
Tasting Notes
Intense and deep cherry red colour.
In the nose, balsamic aromas, candied fruit and mineral (graphite, pencil tip).
In the mouth it is intense, tasty, with elegant tannins. With a persistent, long and slightly sweet aftertaste.
Serving and Pairing Recommendations
Ideal temperature between 18-19ºC. It combines well with dishes and spicy stews and aged cheeses average, unsmoked. It also accompanies red meats well.
