VINEYARD/ORIGIN
Finca "El Monte" Plot 32 approximately 0.5 H where Viura, Malvasía and Garnacha Blanca coexist. Located at 670 meters above sea level and facing N-S. The soil structure is sandy loam with a significant presence of small pebbles.

ELABORATION

The grapes are carefully harvested, eliminating leaves and unsuitable clusters. Viura is a grape variety that is assumed to have a low aromatic expressiveness. This wine and its special elaboration prove this concept wrong. Fermented in 400-litre barrels, which are placed upright, without the upper bottom. Here, with care and attention, both alcoholic and malolactic fermentation are carried out. The process ends with a few months in the barrel and then in concrete, where the wine relaxes and takes some much-needed rest.
The wine is not clarified or filtered, which is why some possible precipitate and/or slight turbidity may appear.
Minimal intervention in SO2 management.

Tasting notes

Golden yellow colour with a light orangey background caused by its special way of fermenting. Floral aroma of herbs, fennel and menthol and honey from its fermentation with the wood. In the mouth it is silky, sweet, and long. Velvety sensations and a slightly bitter aftertaste.

Serving and pairing recommendations

Best served between 12º and 14ºC. It goes well with rice, risotto, oily fish, and red meat.
