80% Tempranillo, 15% Garnacha, 5% Graciano.

Finca el Monte, vineyards aged more that 70 years old. Located at 650 meters altitude, in Tudelilla village boundary.
Elaboration
Once in the winery, the grapes are destalked and slightly crushed. The fermentation temperatures are controlled up to 28-29ºC and the devatting is made after a 15 days maceration, specifically when it is perceived that the colour extraction has reached optimal levels. Subsequently, the wine is put into the barrels, where it will remain during 18-22 months. The wine will be aged 60% of the time in “second-year” American oak barrels and 40% in new French oak barrels. After this time, the wine will be bottled and will stay “resting” in the bottle during a minimum of 12-14 months.
Tasting Notes
Bright deep garnet color.
Aromas of red fruits blended with notes of vanilla and spices. The mouth is structured, fleshy and filling. Elegant and very round mouth-feel with a very well-integrated oak. Long and complex aftertaste with balsamic notes, very good reminders that invite us to keep on enjoying the wine.
Serving and Pairing Recommendations
Best served between 17-19ºC. The wine pairs perfectly with international cuisine (curried dishes, spicy preparations…) or traditional food as red meats, game and mature cheeses.
